Pizza Burgers

9 English Muffins
1 stick butter
10-18 slices American Cheese (or cheddar)
1 1/2 cups Mozzarella cheese, shredded
1 1/4 pounds ground beef
1 tsp. garlic salt
1 Tbsp. dry minced onion
1 cup pizza sauce (Contadina if on sale)
Filling:
Brown ground beef with onion and garlic salt. Add the pizza sauce. Cool and place in baggie.
You will bundle together the following:
9 English Muffins
1 stick butter
Cheese slices
Shredded Mozzarella
Baggie of meat sauce

Serving Instructions:
Thaw meal package Split English Muffins into halves. Brown cut sides under broiler. Then butter them and top with a slice (or part of a slice) of American Cheese.
Put filling on muffins after the cheese. Next, top with shredded mozzarella. Put under broiler until cheese melts. Serve immediately. These freeze well assembled, so package the rest in freezer bag for later.
Serving directions for assembled frozen Pizza Burgers:
DO NOT THAW. Put on cookie sheet in oven at 400F until heated through (about 15-25 minutes).
Chicken with Creamy Dijon Herb Sauce
ReplyDelete½ cup chicken broth
6 tbsp Dijon mustard
1/3 cup cream cheese
1 tbsp minced herbs (parsley, basil or chives)
1 tbsp oil
2.5 lbs boneless skinless chicken breasts
1 tsp minced garlic
Mix broth, mustard, cream cheese, herbs and garlic until well blended. Place in a plastic bag. Place chicken breasts in a separate plastic bag. Bundle bags together. Seal, label and freeze flat.
Serving instructions:
Completely thaw contents. Place chicken in a baking pan. Cover with sauce. Bake at 350 until chicken is done, approximately 3-45 minutes.
Bacon Cheeseburger Potato Pie
ReplyDelete2 pounds extra lean ground beef
1/2 cup Progresso plain bread crumbs
1/4 cup finely chopped onion
1/4 cup ketchup
2 tsp prepared mustard
1/2 tsp salt
3 slices bacon
1/2 cup shredded cheddar cheese
22 ounce bag Alexia Red potatoes with Garlic and Parmesan Mashed Potatoes (at Wal-Mart)
In medium bowl, combine first 6 ingredients. Place in ziploc bag.
Cook bacon until crisp. Cool and crumble. Place crumbled bacon and shredded cheddar in ziploc bag. (You could purchase precooked bacon)
Bundle the 2 bags plus the bag of potatoes, label, and freeze flat.
Serving Day Instructions:
Thaw completely. Press meat mixture into bottom and up sides of ungreased 9" deep dish pie plate. Bake at 375 for 15 minutes.
Remove partially baked beef crust from oven; pour off any drippings. Spoon potatoes evenly into crust. Return to oven and bake an additional 15 minutes or until beef is thoroughly cooked and potatoes are heated through.
Remove pie from oven. Top with bacon and cheese. Return to oven and bake an additional 5 minutes or until cheese is melted. Remove from oven. Top with green onions and chopped tomato if desired. Let stand 10 minutes before cutting into wedges to serve.
16 ounce bag frozen spears/tops
ReplyDelete3 cups cooked and cubed boneless skinless chicken or turkey breasts
2 cans cream of chicken soup
2/3 cup milk
1 cup shredded cheddar cheese
1/4 cup fine dry bread crumbs (like Progresso)
2 Tbsp butter melted
Combine soup and milk. Stir in cooked cubed chicken and cheese. Transfer to ziploc bag.
Combine bread crumbs and melted butter. Place in snack-size ziploc bag.
Bundle the 2 baggies with 16 ounce bag of frozen broccoli spears. This could be bundled in a plastic Wal-Mart bag. Label.
Serving Day Instructions:
Cook broccoli according to package directions, being careful not to overcook. Drain. Preheat oven to 450. Place broccoli in glass baking dish. Pour chicken mixture on top. Sprinkle with bread crumb mixture. Bake 15 minutes or until hot and bubbling.
Hearty Ham Casserole

3 cups cooked ham, cubed
2 (15.25 ounce) cans whole kernel corn, drained
6 ounces cheddar cheese, shredded
6 Tablespoons butter
1/3 cup chopped onions
1/2 cup all-purpose flour
2-2/3 cups milk
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
12 oz. package egg noodles
Preparation:
Combine ham, and corn; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk, pepper, and garlic powder. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well. Cool somewhat before pouring into freezer bag. Include bag of egg noodles on swap day.
Serving Day:
Thaw. Cook egg noodles for approximately half of the cooking time listed on package directions. Add as many cooked egg noodles to the packaged ham mixture as you like. (The rest of the noodles can be served to those kiddos who like plain noodles!) Pour into greased 9x13 baking dish. Cover and bake for 30 minutes or until hot, bubbly, and noodles are done to your liking. Season as desired.
Note that you can also serve this as a sauce over cooked noodles if you want to omit the baking.
Honey Dijon Chicken Freezer Recipe
ReplyDelete2.5 lb boneless skinless chicken breast halves
2 garlic cloves, minced
1 tsp dried thyme
Salt and pepper to taste
1 tbsp vegetable oil
1 tbsp cornstarch
3/4 cups pineapple juice
1/4 cup water
1/4 cup Dijon mustard
1/4 cup honey
Mix garlic and thyme, and rub chicken with the seasoning mixture. Next, sprinkle chicken with salt and pepper. In a large skillet, cook chicken in a small amount of cooking oil until chicken is no longer pink. In a small bowl, combine cornstarch, pineapple juice and water, stirring until smooth. Then stir in mustard and honey to cornstarch mixture. Add the mixture skillet. Bring to a boil; cook and constantly stir for 2 minutes or until sauce is thickened. Cool, label and freeze flat.
On Serving day:
Thaw overnight in the refrigerator. Remove from the refrigerator about 30 minutes prior to baking. Place chicken and sauce in a casserole and bake at 350°F for 35 minutes or until chicken and sauce is heated through. Serve over rice or pasta noodles.
