  1. Potato Stuffed Meatloaf
    -----------------------
    1 cup soft bread crumbs
    1/2 cup beef broth
    1 egg, beaten
    4 tsp. dried, minced onion
    1 tsp. salt
    1/4 tsp. Italian seasoning
    1-1/2 lbs. Ground beef
    4 cups frozen shredded hash browns
    1/3 cup grated Parmesan cheese
    1/4 cup Fresh minced parsley
    1 tsp. onion salt

    Mix breadcrumbs, 1/2 cup beef broth, egg, onion, salt and Italian seasoning in a large mixing bowl. Let stand for 2 minutes. Add ground beef and mix thoroughly. In a second bowl mix hash browns, Parmesan cheese, parsley, and onion salt.

    Place meat mixture and potato mixture in separate freezer bags. Combine in a single gallon freezer bag. Seal, label and freeze flat.

    Potato Stuffed Meatloaf Serving Directions:

    Completely thaw meat and potato mixtures. Line a baking sheet with wax paper. Place meat mixture on waxed paper and pat into a 10-inch square. Spoon the potato mixture over meat mixture. Roll up jellyroll style removing wax paper as you go. Discard wax paper. Pinch edges and ends to seal. Place the meatloaf in a 9x13 baking dish.

    Bake at 375 degrees for 50 minutes. Spoon ketchup or barbecue sauce (or sauce of your choosing) over the meatloaf. Bake an additional 10 minutes

  2. Chicken Tortilla Soup:

    1 medium onion, chopped
    2 cloves garlic, minced
    1-2 T. oil for sautéing
    4 oz can chopped green chilies
    15 oz can Italian style chopped stewed tomatoes, undrained
    4 cups chicken broth
    1 t. ground cumin
    1 t. chili powder
    1 t. lemon-pepper seasoning
    2 t. Worshershire sauce
    1/2 t. Tabasco
    3 cups chicken, baked or broiled, chopped or shredded

    Sauté onion and garlic in oil. Add rest of ingredients. Simmer for 20 minutes. In a small bowl mix ¼ cup flour and ½ cup water. Wisk back into soup and heat to boiling. Cool soup. Double bag, seal, label and freeze flat.

    Serving day:
    Thaw completely. Heat until warmed through. Top with any of the following:

    Grated cheese for topping
    Tortillas cut into 1-inch squares (fried in oil until crispy) or purchase corn tortilla strips or chips
    Avocado, sliced or cubed
    Sour cream
    Fresh diced tomatoes
    Chopped fresh cilantro

  3. Taco Pasta

    1 jar - ?? oz. marinara sauce
    1 box ?? oz medium pasta shells
    ½ lb ground beef
    ½ lb sausage
    1 pkg. taco seasoning mix
    2 cups cheese
    2 cups crushed tortilla chips

    Brown ground beef and sausage together. Drain. Mix with taco seasoning mix. Boil pasta. Drain. Combine meat, pasta and marinara sauce. Place in a Ziploc bag. Place cheese and crushed chips in separate bags. Bundle meat mixture, cheese and chips in a freezer bag. Seal, Label and freeze flat.

    Serving day:
    Thaw completely. Place meat mixture in a 9x13” pan. Top with shredded cheese. Bake for 25 minutes at 375. Top with chips and additional toppings of your choice just before serving:

    Lettuce
    Tomatoes
    Olives
    Onions
    Salsa
    Sour cream

  4. Chicken Cordon bleu Casserole

    4 chicken breasts
    4 slices of ham (from Northwoods)
    4 slices of Swiss cheese
    ½ cup milk
    2 cans cream of chicken soup
    1 box stove top stuffing

    Brown chicken on both sides. When cool place a slice of cheese around the chicken breast and then wrap a piece of ham around it. Wrap each breast in a piece of saran wrap. Mix soup and milk. Place in a Ziploc bag. Bundle together chicken, soup mix and bag stuffing mix together in a freezer bag. Seal, label and freeze flat.

    Serving day:
    Thaw completely. Unwrap each piece of chicken and in the bottom of a baking pan. Pour sauce over the top of all and then cover with stuffing mix. Bake at 350 covered for 20 minutes, then uncovered for 40 minutes.

  5. Taco Pasta

    1 jar - 26 oz. marinara sauce
    1 box- 14.5 oz medium pasta shells
    ½ lb ground beef
    ½ lb sausage
    1 pkg. taco seasoning mix
    2 cups cheese
    3 cups crushed tortilla chips

    Brown ground beef and sausage together. Drain. Mix with taco seasoning mix. Boil pasta. Drain. Combine meat, pasta and marinara sauce. Place in a Ziploc bag. Place cheese and crushed chips in separate bags. Bundle meat mixture, cheese and chips in a freezer bag. Seal, Label and freeze flat.

    Serving day:

  6. Marilyn’s Famous Hot dish Marilyn Schroder

    1# ground beef
    salt and pepper to taste
    onions – several slices chopped
    1 can tomato soup
    1 can chicken noodle soup – not diluted
    ½ - 1 bag of chow mien noodles


    Freezer Meal Prep:
    Fry ground beef with chopped onion to taste.
    Salt and pepper to taste
    Place beef mixture in zip-lock bag and add tomato and chicken noodle soups (do not add water to chicken noodle) Mix together.

    Package ½ - 1 bag of chow mien noodles in baggie and place in gallon zip lock along with meat mixture. Freeze flat.


    Serving Day:
    Thaw meat/soup mixture.
    Place in casserole dish and mix with chow mien noodles.

    Bake at 350 degrees x 20-20 minutes until noodles are soft and cooked through.
